Really don’t be skimpy with the salt — the salt will work with all the natural lovely juices of the roast to produce a crusty exterior.3. Apply the garlic/rosemary blend completely over the exterior of the sirloin roast, rubbing it in. Put the probe of a meat thermometer to the very center of the roast. 4. Place into the oven, and roast until you achieve an interior temperature of 130 F for medium rare. For every extra ’step’ of doneness, add ten degrees. Thus medium would be 140F, medium well, 150 F, and well done 160 F.5. Pull from the oven as soon as the thermometer states 130F. Make a tent of foil and loosely cover the beef roast. You will notice carry over cooking increase the temperature another 5-10 degrees. That’s fine – you prepared on it.6. Carve your sirloin on a cutting board or big serving platter to catch the juices. Don’t throw away those – they are scrumptious too! Use a spoon to drizzle the jus across the meat once you serve it.A little horseradish sauce is also a very fine thing – as is good Dijon, or possibly a red wine sauce….or nothing at all! This one is definitely delicious enough to go naked! Yay naked!
